Instructions. Start by soaking the cashews in a bowl of boiling water for 10 minutes. Cut both ends off the cucumber and then peel. Using a cheese grater shred the cucumber and then place the shredded cucumber in a sieve, sprinkle with salt and leave to drain for about 10 minutes.

1/4 teaspoon freshly ground pepper. In a medium bowl, add the yogurt, cucumber, red onion, dill, garlic, lemon juice, olive oil, salt and pepper. Blend all the ingredeints together well, give it a taste and feel free to add more salt or dill to taste. You could also add some freshly chopped mint for an extra kick.

Grate the cucumber on a box grater, and transfer the grates to a sieve set in a bowl. Press the cucumber grates with a paper towel, and let drain until ready to use, discarding the cucumber liquid. Add the drained cashews and 1/2 cup water, lemon juice, vinegar, and garlic to a high-performance blender, and blend.
